Randall Close's banana biscuits

They agree these easy-to-make banana biscuits are delicious. We hope you enjoy them too.

Randall Close's banana biscuits


  • three large ripe bananas, mashed
  • 100g butter (ideally, choose
  • a low-fat alternative)
  • ½ cup sugar (200g)
  • 1 ½ cups self-raising flour (192g)
  • ½ cup coconut (30g)
  • ½ cup rolled oats (45g)


  1. Preheat oven to 230°C. Line baking tray with baking paper and set aside
  2. Cream the butter and sugar
  3. Stir in the bananas until combined
  4. Add the flour, oats and coconut and stir until thoroughly combined
  5. You can also add raisins / dates / bits of dried fruit
  6. Place teaspoons of the mixture on the baking tray, leaving room for each biscuit to spread
  7. Place in the oven and turn it down to 200°C
  8. Bake for 10 minutes
